onion soup recipe
4 large onions sliced and gently sweated down in a cast iron pan
with extra virgin olive oil and salt, lid on
chicken stock added to the sweated onion
immersion blender used to make the soup smooth and creamy
dried thyme added and stirred in the soup
onion soup served with a grated cheddar cheese topping and crushed dried purple basil
