"Raising NY's Cholesterol Since 1929"

Making Challah Dough in Bread Machine:

 

Put ingredients in Dough bucket and set machine for Dough Cycle.

 

3/4 cup plus 1 Tablespoon warm water

1 egg

2 tablespoons butter

2 tablespoons of sugar

1 1/2 teaspoons Kosher salt

3 1/4 cup bread flour

1 1/2 teaspoons yeast

 

Garnish:

1 egg yolk

2 tablespoons cold water

1/2 teaspoons kosher salt or topping of your choice. I preferred to use sesame seeds.

 

Set your machine for the Dough setting and let it do it's thing.

Afterwards: Grease a baking sheet and set aside while you braid your dough. Take out and split dough in half and make two braided loaves or leave alone and divide in thirds to make one large braided loaf. Braid each third into 13" long ropes. Then braid the dough. Braid your dough gently and loosely. Place on baking sheet and cover to proof for 45 minutes until double. (Dough is ready when indention remains when touched.) In the meantime; Heat oven to 375 degrees. To Garnish: Mix egg yolk and cold water, brush over loaves. Sprinkle with remaining kosher salt or your preferred topping. Put in oven and Bake about 25 minutes or until golden brown.

 

I posted this recipe because years ago I got this off the internet from a woman when baking forums were at it's beginnings. I loved, but lost the recipe. Even though I remembered it, I was not quite confident about it after getting side tracked from baking for a few years. But I found it when I was going through some boxes. This is the best recipe that suites our needs for making challah bread for a small family and company. The two loaves are Nicely sized and it also can easily make one Large loaf. I highly recommend trying this recipe and sharing it with your friends to keep it going, as it's easy on the eggs and butter/oil for people who watch their cholesterol.

Cardamom

The health benefits of cardamom include gastrointestinal protection, cholesterol control, control of cancer, relief from cardiovascular issues, and the improvement of blood circulation in the body. It is useful for curing dental diseases and urinary tract infections such as cystitis, nephritis, and gonorrhea. Cardamom possesses aphrodisiac properties and is also used as a cure for impotency, erectile dysfunction, and premature ejaculation.

 

Cardamom is a spice that originated in India, Nepal, and Bhutan. Today, it is available in most tropical places in Asia, including India, China, Bhutan, Vietnam, Malaysia, Korea, and Japan. It is regarded as the Queen of Spices and is one of the most expensive spices, ranking third, the first and second being saffron and vanilla, respectively.

 

It is believed that cultivation of cardamom began in the tropical and humid climate of the Western Ghats in India. In botanical terms, it belongs to the family of Zingibercease and its scientific name is Elettaria cardamomum. There are two main types or subspecies of cardamom. Their scientific names are Elettaria, which is called green or true cardamom, and Amomum, which stands for black, white, or red cardamom.

 

The Spices Board of India recognizes three varieties of cardamom, which include the Malabar, Mysore and Vazhukka varieties. There is another variety of cardamom, named Njallani, which has become very popular along with the three normal varieties. This variety was developed by a small farmer named Sebastian Joseph from the Idukki district in Kerala.

 

It is found in the form of a small pod with black seeds inside. Both the seeds and the pod give a pleasant aroma and flavor. Therefore, they are used as flavoring agents in Indian cuisine. Its use is just not just limited to hot and spicy dishes; the seeds are also added to desserts and beverages to complement the sweet flavor. Cardamom tea is a very famous beverage, along with ginger tea, in India.

 

In India, cardamom was traditionally considered as an herb and was one of the ingredients in Ayurveda (the ancient Indian science of medicine and lifestyle) and traditional Chinese medicine. It was believed to be a remedy for teeth and gum infections, throat problems, congestion of the lungs, pulmonary tuberculosis, inflammation of the eyelids, gastrointestinal disorders, disintegrating kidney, and gall bladder stones, and was also used as an antidote for poisons and venoms.

The red deer is Britain's largest land mammal. They are most numerous in Scotland, but isolated populations occur from the Lake District to Cornwall, with a few small herds in Wales. Venison from red deer in Forestry Commission woods is very popular with consumers in Britain. Venison from red deer has less cholesterol and fat than other red meat, and deer living in the woods do not have any artificial feeding.

It was really jolly adequate!

 

I was a little worried that the ingredient might be prime cuts of a vegan, but the packaging confirmed it was Quorn!

 

We're here, and we have gone animal free, apart from the animal derived cholesterol in our LCD displays, and perhaps some of the components of our rechargable batteries!

1. i was born and raised in the baltimore metropolitan area, the oldest of three, one brother, one sister.

2. i am a member of the first graduating class from randallstown high school in 19???

3. my nickname in high school was Big I, never quite liked it, but when you're last name is tucker, it could have been a lot worse.

4. i ran cross country and track in high school, didn't care much for cross country, but the track coach said if you're going to run track son, you're running cross country. thanks coach. i was a highly ranked quarter miler in my senior year at 51 seconds.

5. i attended the university of maryland at college park and the pennsylvania college of optometry in the city of brotherly love.

6. i have been practicing optometry for 30 years. "but dr tucker, you couldn't possibly have been practicing for 30 years". denial, as they say, ain't just a river in egypt.

7. i know you're jealous, but as a self-employed eye care practitioner, i get one whole week of unpaid vacation every year. so i try to pick someplace nice to go...where there's a meeting. hence, some of the recent landscape posts.

8.i believe in empowering my staff, but ultimately the buck stops with me. therefore, do you know how we achieve a consensus at my office??? when they agree with me :-)

9. i have what i believe is a pretty loyal patient base, and have initiated a 20 year hug policy for the women...guys get handshakes and water bottles.

14. speaking of my gene pool, it sucks. virtually every systemic disease known to man runs in my family, including hypertension, diabetes, arthritis, heart disease, thyroid dysfunction and cancer. i have had elevated cholesterol virtually my entire life, nearly 300 prior to initiating treatment with diet (yeah sure), exercise and 3 different medications. my cholesterol is now down to 125. my physician said i had the cholesterol of a young woman. i said, i'd rather have the young woman. ba da bing

15. by the way, she said, you now have diabetes. diabetes is a tougher nut to crack, but other than being angry and depressed i'm handling it rather well. jk :-)

They have an unusual double coat of hair. On the outside is the oily outer hair - the longest of any cattle breed - covering a downy undercoat. Their skill in foraging for food allows them to survive in steep mountain areas where they both graze and eat plants that many other cattle avoid. They can dig through the snow with their horns to find buried plants.

 

Mature bulls can weigh up to 800 kilograms (1,800 pounds) and cows can weigh up to 500 kilograms (1,100 pounds). Cows typically have a height of 90–106 centimeters (3–3.5 ft), and bulls are typically in the range of 106–120 centimeters (3.5–4 ft). Mating occurs throughout the year with a gestation period of approximately 277–290 days. Most commonly a single calf is born, but twins are not unknown. Sexual maturity is reached at about eighteen months. Highland cattle also have a longer expected lifespan than most other breeds of cattle, up to 20 years.

 

The coat colors are caused by alleles at the MC1R gene (E locus) and the PMEL or SILV gene (D locus).

 

They have a docile temperament and the milk has a high butterfat content, so have traditionally been used as house cows. They are generally good-natured animals but very protective of their young.

 

All European cattle cope relatively well with low temperatures but Highland cattle have been described as "...almost as cold-tolerant as the arctic-dwelling caribou and reindeer..." Conversely they are much less tolerant of heat than zebu cattle, which originated in South Asia and are adapted for hot climates.[10] Highland cattle have been successfully established in countries where winters are substantially colder than Scotland such as Norway and Canada.

 

A fold of semi-wild Highland cattle was studied, over a period of 4 years. It was found that the cattle have a clear structure and hierarchy of dominance, which reduced aggression. Social standing depended on age and sex, with older cattle being dominant to calves and younger ones and males dominant to females. Young bulls would dominate adult cows when they reached around 2 years of age. Calves from the top ranking cow were given higher social status, despite minimal intervention from their mother. Playfighting, licking and mounting were seen as friendly contact.

The only place that I can afford to have buffalo meat is at Tommy's Joynt in San Francisco, California. It's leaner than beef and has less cholesterol, too.

There is a restaurant in San Diego, California called "Islands" with a beach and surfer theme in its decor, very casual but nice. They serve some really good food, high cholesterol fat-laden "American Food" - but I guess if you only indulge once in a while it won't kill you! This "Big Wave" hamburger was delish!!

 

INFORMATION ON THE HAMBURGER:

 

A hamburger (or simply burger) is a sandwich that consists of a cooked patty of ground meat and is generally served with various garnish or condiments like ketchup, mustard, mayonnaise, lettuce, tomato, onion, relish, pickles and cheese toppings, placed inside a sliced bun, often baked specially for this purpose, or pieces of bread or toast. The meat patty is beef, unless otherwise noted.

 

Hamburger also refers to the cooked patty of ground meat by itself. The patty alone is also known as a beefburger, or burger. Adding cheese makes it a cheeseburger. Hamburger is actually a distinct product from ground round and other types of ground meat. However, ground beef of any form is often commonly referred to as "hamburger." A recipe calling for 'hamburger' (the non-countable noun) would require ground beef or beef substitute- not a whole sandwich. The word hamburger comes from Hamburg steak, which originated in the German city of Hamburg. Contrary to what folk etymology might lead one to believe, there is no actual 'ham' in a hamburger.

 

According to the American Heritage Dictionary, the term "hamburger" comes from Hamburg steak, which was first recorded in English in 1884 but was probably used much earlier. A form of pounded beef called "Hamburg Steak" was common in Hamburg in the middle of the 19th century. The recipe was brought to North America by the large numbers of people immigrating from Germany at the time, many of whom passed through the port of Hamburg. There is indirect evidence for its use on an American menu in 1836. The form hamburger steak first appeared in a Washington state newspaper in 1889.

 

The first recipe close to the current idea of a hamburger, using ground beef mixed with onion and pepper dates from 1902. The Oxford English Dictionary of 1802, on the other hand, defines "Hamburg Steak" simply as cured beef. In a time without refrigerators, when it took weeks to travel from Europe to the USA, cured meat was a standard food for poor US immigrants, who often started from Hamburg (which was and is the biggest German seaport and one of the biggest in the world). In a tween deck, where cooking is nearly impossible, cutting tough cured beef into pieces and putting it between slices of bread may suggest itself.

 

A cheeseburger is a hamburger with cheese in addition to the meat. In 1924, Lionel Sternberger grilled the first cheeseburger in Pasadena, California. When Sternberger died in 1964, Time magazine noted in its February 7 issue that:

 

"...at the hungry age of 16, [Sternberger] experimentally dropped a slab of American cheese on a sizzling hamburger while helping out at his father's sandwich shop in Pasadena, thereby inventing the cheeseburger..."

The 4th of July brings a new dish to the table. This recipe comes from Everyday Cooking with Dr. Dean Ornish. I doubled the recipe as I wanted more for using as a spread as well.

Instead of using the egg yokes as filling, you use 1/3 cup of the liquid from a can of chickpeas (garbanzo beans) put the beans and reserved liquid into a food processor and add parsley, mustard, lemon zest, garlic, some pepper and process until smooth. Then pour that into a work bowl and mix in some minced red onion and some minced capers. Fill the eggs and sprinkle lightly with paprika. 0% Cholesterol
