oooh boy these were good. i LOVE me some peanut brittle but i've never ever attempted to make it myself. not sure why - maybe it was the intimidation with candy making and thermometers and such. but i'm over it now with my first batch and it was a winner.
i was searching epicurious for a candied apple recipe for a work project when i stumbled upon the "old fashioned peanut brittle" recipe.
after reading the reviews [always a must] i saw a guy mention adding a seeded and diced jalapeno and some cayenne pepper at the end of cooking and knew i had to try it. the recipe worked beautifully but i did make a half batch and forgot to halve the butter and only used light corn syrup as i had no dark. even still it was perfect. for a warm and humid january day here in Alabama i was surprised at the crunch and the lack of tackiness - it still stuck to your teeth some but in that satisfying way that good peanut brittle does.
Essa foto é só pra não dizer que não fiz foto nenhuma em Cayenne. Fiz uma passagem muito rápida pela capital da Guiana Francesa e como já era o final de uma cansativa viagem eu estava com muita preguiça de tirar fotos.
