Στα μέσα του 16ου αιώνα έφτασε για πρώτη φορά στον Νέο Κόσμο (Αμερική) ο καφές σε μια περιοχή που λεγόταν Νέο Άμστερνταμ. Οι Βρετανοί ονομάσαν την περιοχή αυτή αργότερα Νέα Υόρκη.
Όπως και στην Ευρώπη, έτσι και στον Νέο Κόσμο άρχισαν να εμφανίζονται τα Coffee Houses σε πολλά σημεία, αλλά μέχρι το τέλος του 18 αιώνα δεν ήταν το αγαπημένο αφέψημα του κόσμου. Την θέση αυτή κατείχε το τσάι. Αυτό άλλαξε όταν ο βασιλιάς Γεώργιος ο 3ος αύξησε την φορολογία του τσαγιού το 1773 και επαναστάτησε ο λαός ο οποίος το αντικατέστησε με τον καφέ. Η κίνηση αυτή είναι γνωστή στην ιστορία σαν Boston Tea Party (πάρτυ τσαγιού της Βοστόνης).
Λέγεται πως από εκεί εμπνεύστηκε ο Θωμάς Τζέφερσον όταν είπε πως "ο καφές είναι το αγαπημένο ποτό του πολιτισμένου κόσμου".

Ο γνωστός μουσικοσυνθέτης Ludwig van Beethoven λάτρευε τον καφέ. Αγαπούσε το αφέψημα τόσο πολύ που δεν άφηνε άλλον να του φτιάξει το ρόφημά του. Είχε έναν συγκεκριμένο τρόπο, μια ιεροτελεστία που ακολουθούσε. Πάντα μετρούσε 60 κόκκους καφέ σε κάθε κούπα που προετοίμαζε. Δεν ξέρουμε γιατί, αλλά πρέπει να είχε διαπιστώσει πως 60 κόκκοι ήταν η ακριβής ποσότητα που του έδινε τον τέλειο συνδυασμό γεύσης, μυρωδιάς και ενέργειας.

To start with I never used to drink coffee. But after moving here and with traveling jobs, I kind of got into this habit of drinking coffee and one main reason behind it was Starbucks.
I love the environment there. Nice clean stores, very good wall hangings, pleasant music and beautiful girls. I like most of their recipes-Tazo Chai Latte, Pumpkin spice Latte and Caramel Machhiato being my favorite when served extra hot without foam and Strawberry frapuccino on the cold side. Recently I have become so addicted to Starbucks that I end up picking a coffee almost every time I hit one of them on my way.
So i decided to take a resolution to stop that, but had to get a last one and you are looking at it...!!
Το 1724 ο Δήμαρχος του Άμστερνταμ έδωσε σαν δώρο ένα μικρό δενδρύλλιο καφεόδεντρου στον τότε Βασιλιά της Γαλλίας, τον Louis XIV. Ο Βασιλιάς διέταξε να μεταφυτευθεί στους βασιλικούς κήπους στο Παρίσι. Το 1723 ένας νεαρός αξιωματικός του Γαλλικού πολεμικού ναυτικού, ο Gabriel de Clieu απέσπασε έναν σπόρο από το δενδρύλλιο αυτό το οποίο μετέφερε στην Μαρτινίκα, παρότι αντιμετώπισε άσχημο καιρό στο ταξίδι, έναν σαμποτέρ και μια επίθεση από πειρατές. Ο σπόρος ήταν γραφτό να φτάσει στον προορισμό του.
Όταν φυτεύτηκε στο έδαφος της Μαρτινίκας ο σπόρος αναπτύχθηκε σε δέντρο το οποίο στην συνέχεια αποτέλεσε την βάση για 18 εκατομμύρια περισσότερο καφεόδεντρα σε όλο το νησί! Αυτός ο σπόρος ήταν ο γόνος όλων των καφεόδεντρων της Καραϊβικής, της Κεντρικής και της Νότιας Αμερικής!
