Really gungey and chocolatey (made with real chocolate, rather than cocoa), pretty yummy - but you *can* taste the beetroot! I smothered it in ganache!

Yes, that really is canned beetroot ... in aspic. Unfortunately (?) it set on an angle so all the beetroot sank to one end of the tupperware container.
This is how you pickle beetroot for the barszcz. Cleaned and sliced beetroot with a few pieces of garlic is put in a sterilised glass jar. This you top with cooled boiled water and cover with a cloth. You leave it for about 1 week until a white foam starts forming on top and it starts to smell a bit sour. Then the beetroot is discarded and the bright burgundy water/juice is filtered and used in the soup. You should never put this juice in boiling soup as it will lose the colour.
Yes, watched jamie oliver podcast and decided to give it a try. Not that pretty, need to work on that, but tasty and very fresh. Too much of the creme fraiché though.

Beetroot soup, sweetcorn (obviously) and brie on toast. All locally sourced: the Tesco's where the bread was bought is next door to the allotment (where the beetroot and sweetcorn were grown) and the brie is from the Lidl just over the road from home. The green chillis in the soup are from the Seychelles but as I was coming home anyway and they were in my suitcase that doesn't count.
