Lunch for tomorrow. Recipe from www.globalgourmet.com

 

1 tbs ghee or butter

1 small onion, chopped

3 cloves garlic, minced

2 tsp finely chopped ginger

1 tsp ground cumin

1/2 tsp ground turmeric

1/2 tsp ground coriander

15oz can of crushed tomatoes

2 red potatoes, diced

1 1/2 cups frozen peas

1 tsp garam masala

2 -4 tbs fresh cliantro, chopped

 

Saute the onion and butter over medium-low heat for 5 minutes. Add the garlic and ginger and saute for one more minute. Add the cumin, turmeric and corriander; stir well.

 

Add the tomatoes and bring mixture to a boil. Add the potatoes, cover and simmer for 10 minutes. Add the peas and cook for 10 more minutes. Turn off the heat and add the garam masala.

 

Just before serving, sprinkle the fresh cilantro on top.

 

I used a can of diced tomatoes instead of crushed and I used a ginger paste instead of freshly chopped ginger.

 

Tasty, but not real hot. I'll add some hot sauce when I have this for lunch.

Aloo Paratha, Stuffed paratha

Make naan, make tofu paneer, add 1 cup minced spinach tofu paneer. Recipes are a previous post.

Layer the paneer on the naan, cover with thinly sliced potato, a little sliced shallot, saffron and drizzle with truffle oil.

Bake in a hot oil.

Serves 1-2.

Dinner of chicken biryani, paneer butter masala (paneer in onion and tomato sauce), mutton roganjosh (mutton in yogurt and tomato sauce), dal palak (lentils with spinach), aloo mutter (potato and peas) and pav bhaji (roasted egg plant cooked with tomato) from Westin’s weekend midnight buffet.

Today, probably for the first time in my life - our lives, I suppose - we were all barred from praying Jumma namaz. In a country which was made in the name of Islam. Ours is the only country in the modern world which was carved in the name of Islam.

 

My wife had cooked my favourite dish, chicken pulao and served with hari chutney (green chilli mixed), kachumber (yogurt salad) and orange sherbet (not in photo). Rice used was basmati though I prefer sela chawal (old rice) with long grains.

 

On my side is probably one of my all time favourite books, Photo Ark, an incredible 16 years in making by Nature photographer Joel Sartore. It is his pet project started from his Nebraska home while his wife went into cancer surgery.

 

All the animals photographed are captive and therefore black or white backgrounds have been used for them as a back drop. I also used my wife's black abaya as the backdrop for this shot !

Farali Aloo Palak Ki Sabzi has a pleasing softness, taste and nutrition which is sure to make you rejoice during fasting. Serve it with Rajgiri Paratha. Here is a simple recipe to make it.

egg curry in a mild garlic, onion and spice sauce,

Aloo Mattar ( potatoes and green peas in a spicy gravy)

Baingan Bhartha (eggplant baked in Tandoor and sauteed with herbs and spices),

In a bowl Saag Paneer (Spinach with homemade farmer's cheese)

You can't get much more earth-friendly and fair-trade than "Aloo" from Himalaya Yarn, a natural fiber handspun by families in Nepal through a cottage industry. The Himalayan Giant Nettle plant grows perennially, resists disease and pests (obviating the use of pesticide in its cultivation), and produces a rugged, moth repellant fiber similar to raw linen.

Aloo chole, mattar paneer and jasmine rice. I used local tomatoes and garlic in both. So yummy!
