This rice and sausage dish is quick, easy and delicious! It's perfect for those busy weeknights and it's easy on the wallet.

One of the BEST things about being home from vacation is having my kitchen back and being able to cook for myself. I get restaurant burnout really quickly when I travel and always look forward to making and eating my own food when I get home.

 

All this week, we've been having fall-like weather in Virginia. Today when I left work, it was 76 degrees outside. The nights have gone down into the high forties/low fifties. The cool, crisp air has given me such a longing for autumn. So, I decided to cook something I normally would make in October rather than August.

 

Country French Chicken is a Rachel Ray (30 Minute Meals) recipe. Honestly, it's more like an hour meal - and I am fast in the kitchen. I don't see any way this meal can make it onto the table in half an hour unless you have all your prep work done ahead of time.

 

Despite the longer cook time, the meal was awesome. As you can see, the meal is not terribly elegant to look at, but it has a rich herbal flavor. The tarragon lends a really complex flavor to the red wine and tomato-based sauce. The recipe says to use boneless chicken breasts and/or thighs. I used all breast meat since I do not like the texture of dark meat. The chicken stayed moist and almost fork tender in the finished product.

 

With this particular meal, I made Rachel's entire menu with the buttered herb noodles and sugar snap peas. The dinner garnered thumbs up from both Adam and me!

Recipe from Jamie Oliver's "30 Minute Meals" book / tv show

 

Dauphinoise Potatoes

1 red onion, 1kg Maris Piper potatoes, 1 nutmeg, 2 cloves of garlic, 1x 300ml tub of single cream, parmesan cheese, 2 bay leaves, a bunch of thyme.

 

Chicken

Fresh rosemary, 4x chicken breasts (skin on), 4x tablespoons of Colman's mustard powder (I just used Colman's mustard), 1 large leek, 4 cloves of garlic, white wine, 75ml single cream (taken from cream for dauphinoise) 1 heaped teaspoon of wholegrainmustard

 

Greens

Swiss Chard (I used cabbage), 1x 200g bag of prewashed baby spinach, 1 lemon

 

Method

Dauphinoise - Thinly slice the red onion and potatoes (skin left on) and scatter in baking tray. Grate over 1/4 of a nutmeg, crush in 2 unpeeled cloves of garlic and pour in 225ml of single cream. Finely grate over a large handful of parmesan. Add bay leaves, scatter thyme leaves over top and drizzle with a good glug of olive oil. Toss everything together, pour over 200ml of boiling water, cover tightly with foil and put over medium heat on the hob.

 

Chicken - Turn the heat under a deep frying pan to medium. Add rosemary sprigs to pack of chicken, add mustard, season and rub into chicken with hands. Put chicken into pan, skin side down. Chicken should take 18 minutes to cook.

 

Dauphinoise - Give the tray a shake to make sure nothing catches.

 

Greens - slice Swiss chard / cabbage

 

Dauphinoise - remove foil, finely grate another layer of parmesan on top add a few further thyme sprigs and place in pre-heated oven at 220c on the top shelf. Cook for 15 minutes until golden and bubbling.

 

Chicken - Half leek, wash, thinly slice and add to one side of the pan.

 

Greens - Add greens to separate pan in boiling water. Add a good pinch of salt.

 

Chicken - crush 4 unpeeled cloves of garlic into pan. Flip chicken skin side up. Stir leeks and add a good swig of white wine. Once chicken is cooked, add 75ml of single cream and cover with foil.

 

Check the dauphinoise.

 

Greens - Place spinach into colander (do not need to cook). Pour green with boiled water over spinach. Add green and spinach back into empty pan, add a glug of olive oil, squeeze in fresh lemon juice and mix. Serve immediately.

 

Chicken - Turn heat off. Transfer chicken to a board and slice into uneven pieces. Add teaspoon of wholegrain mustard to sauce and stir. Spoon the sauce onto serving platter and place sliced chicken on top.

 

Dauphinoise - Take to table and serve which chicken and greens.

    

Where I come from, the meal you eat between 5.00PM and, say 7.30PM is called "Tea", though those who move in posher circles (or who don't come from somewhere like Lincolnshire) might know it better as Dinner. (Here, we eat our "dinner" around 12 Noon or 1.00PM. "Lunch" is an alien word to us).

Well, this is what I cooked for our tea tonight: Thai red prawn curry, Jasmine rice, Cucumber Ribbon salad and Papaya platter. The recipe came from a book I got for Christmas (thank you, Mrs. Tatraskoda), 30 Minute Meals by Jamie Oliver. I can't quite do them in 30 minutes, (this one took about 35), but I think that's good going, considering this is all made from scratch, no pre-prepared sauces, microwave rice or frozen deserts.

If you like cooking at all, it's a book I'd heartily recommend.

This is currently my boyfriend's favorite recipe. We make it quite regularly, and it is what we had tonight. :)

 

Here's what you will need:

* Burke frozen, pre-cooked Swedish Meatballs (or substitute for another brand)

* 2 cans of Cream of Mushroom with Roasted Garlic soup

* 1 cup of sour cream (we use soy sour cream, because of lactose intolerance issues)

*1 cup of water

*1 small package of baby bella mushrooms (already sliced, if you're lucky), sliced

*1 tsp of parsley

*1 bag of wide, or extra wide egg noodles

 

Preparation:

 

Heat the meatballs in a large skillet, in medium heat, until browned. Sautee the mushrooms in a bit of butter, salt and pepper. In a mixing bowl, combine cream of mushroom soup, sour cream, water, parsley, and sauteed mushrooms. Add mixture to the meatballs and stir until well coated. Cook covered with heat reduced to a low simmer, for about 20 minutes, and serve over cooked noodles. :)

Not the prettiest meal I've ever cooked, but this effort from Monday night was certainly a tasty one. It consists of Oozy Mushroom Risotto, Spinach Salad and Lemon & Rasberry Cheesecake. The whole lot was cooked from scratch in 30 minutes (well, let's say 35). The recipe comes from Jamie Oliver's very excellent 30 Minute Meals.

Despite having owned the Jamie Oliver 30 Minutes Meals book for some time, this is the first full meal I've made from it. I have to say it was a wee bit stressful keeping up to Jamie (had to pause him several times) but the end result was well worth it! I really loved the vegetable curry and the carrot salad was delicious mixed in. Not so keen on the lemon pickle though, think I'll leave it out next time. But otherwise a really enjoyable and tasty dinner!

 

We had such a lovely lazy day today. I don't normally like to waste the day but we had breakfast, pottered about for a bit then headed out for a walk and went to buy the ingredients dinner. Quite relaxed for a change and we really enjoyed it. Now cuddled up watching Blitz. If you're looking for a new dessert just to feel naughty or when having folk round then I can recommend caramel ice cream with franjelico, its amazing!!

Finally catching up with these now. :) I loved the chicken and veg, not raving about the salad though, but I'm not keen on cabbage in general. This is a really tasty summery meal, will have to make it again sometime!

That was the first time I made the Tuscan tomato salad that was meant to go with the lasagne and I have made this a few times since, it's so nice! The lasagne was also really nice, I left out the beans though cos I don't like them. This photo doesn't really do it justice, I couldn't get it out of the dish without it all falling apart.

I wasn't able to find filo pastry anywhere so I used puff pastry instead and just rolled it out quite thin. It was really really nice though and my boyfriend loved it too! I made a Tuscan tomato salad with it which was also super yum.

Verdict: Really liked everything about this! I made such a mess of the kitchen though, but it was worth it!

First off... DELICIOUS!

 

Took about 30 minutes to actually cook the main course - paired it with a baked potato and greenbeans. Throw in a glass of wine and BAM!
