I submitted this to a cookie contest at work yesterday, but there weren't enough people at work who participated so the contest was called off.

 

Biscochitos

 

Biscochitos are crisp anise and cinnamon flavored shortbread-like cookies. Steeped in the tradition of my family with the recipe being handed down from generation to generation as far back as my own mother can remember. The early Spaniards introduced Biscochitos to the American Southwest in the 1500’s during a time when my own family moved from the Iberian Peninsula and settled in the area known then as Santa Fe, Kingdom of New Mexico. The Biscochito became the official “state cookie” of the state of New Mexico since 1989 making the biscochito cookie the first officially government recognized cookie in the United States.
