To look at these little beauties, you wouldn't think that you could whip up a batch in less than an hour. Chouquettes (pronounced shoo-kets) are French pastry sugar puffs and can also be made into profiteroles (French cream puffs) if you're feeling fancy.

It's that magic pâte à choux dough recipe again, the very same one used to make savory Gougères. But instead of Gruyère cheese and black pepper, you'll add a little sugar to the dough and a generous sprinkle of pearl sugar to the top.

How to Make Chouquettes

 

Making the chouquette dough is simple. (Also called choux pastry - the same dough used by patisseries in France to make eclairs, profiteroles, gougeres, and more.) You'll bring most of the recipe ingredients to a boil then add the flour all at once and stir like crazy until it's smooth and pulls away from the sides of the pan. After the dough cools for a few minutes, you'll whisk in the eggs one by one.

I take a rustic approach to forming these, scooping them out in heaps with a small cookie scoop or a couple of teaspoons, but you can certainly pipe them from a pastry bag onto the baking sheet if you want more uniform puffs. A thin sugar glaze (genius tip from Clotilde's Edible Adventures in Paris - first pair of photos below) and pearl sugar sprinkle promise a sweet crackle in every bite.

Chouquettes bake into golden brown little pastries that are crisp on the outside, and hollow, creamy and tender within (before removing from oven, turn off the oven, open it a crack and leave for 5 minutes to ensure that they don't deflate). They're wonderful snacks or party fare and a perfect edible gift. Wrap them up in a little paper sack as they do in Paris boulangeries.

1 tablespoon granulated sugar

6 tablespoons unsalted butter

1 cup all-purpose flour 125 grams

4 large eggs

2 tablespoons pearl sugar (recipe note #3)

Sugar Glaze

2 tablespoons water

2 tablespoons granulated sugar

INSTRUCTIONS

 

Preheat oven to 400ºF.

Line a baking sheet with parchment paper.

Heat water, sugar, salt, and butter in a medium saucepan until boiling. Remove from heat and add flour all at once, stirring vigorously with a wooden spoon, until dough is smooth and pulls away from the sides of the pan.

Let dough cool for 2 minutes then whisk in eggs, one at a time, until shiny and smooth. Set aside. (recipe note #1)

To make sugar glaze, combine water and sugar in a small saucepan. Bring to boil over medium heat; cook and stir until sugar dissolves, about one minute. Remove from heat and set aside to cool.

Scoop dough onto baking sheet with small cookie scoop (a leveled 1 tablespoon scoop is ideal). Or, scoop a walnut-size mound of dough with a teaspoon and, with a second teaspoon, scrape onto prepared baking sheet. Repeat with remaining dough, spacing the dough mounds evenly apart, giving them a little room to spread. (Or pipe dough onto baking sheet with a ½-inch round tip.)

Brush dough mounds with sugar syrup then sprinkle generously with pearl sugar. Bake for 20 to 25 minutes or until puffed and golden brown. Turn oven off and crack the door open for 5 minutes before removing them (this should prevent the chouquettes from deflating). (recipe note #2) Enjoy warm or at room temperature.

NOTES

Don't be alarmed when the dough is lumpy as you add the eggs. Keep whisking (or stirring) vigorously and the dough will become smooth.

For chouquettes that are more crispy, pierce with a sharp knife immediately after removing from the oven to allow steam to escape.

Be sure to use Swedish pearl sugar as the Belgian variety is much larger and won't stick well.

To serve these as profiteroles, just slice in half crosswise and fill with custard, whipped cream, pastry cream, or ice cream and drizzle with chocolate sauce if you like.

If you won't be eating all of these the same day you cook them, they freeze beautifully. Let cool, then transfer to freezer bag for up to one month. Two great options for reheating:

To reheat straight from the freezer: preheat oven to 350ºF then turn oven off. Arrange frozen chouquettes on ungreased baking sheet and, after you turn oven off, place in oven for 5 minutes. Serve warm or at room temperature.

For a crispier version: Thaw at room temperature. Preheat oven to 350˚F. Arrange thawed chouquettes on an ungreased baking sheet and bake for 5 minutes. Serve warm or at room temperature.

So, there's my case. On the right is my usual - a version of the Joye

eGo. You'll notice it nicely matches the case :) This is a usb

passthrough model, so, I never really re-charge the battery - you plug

it into a usb cable and can keep vaping, plus it regulates the voltage

so it's even a different experience, so, it's like 2 devices in one.

This is what I use most - it has a 2 ohm cartomizer in it with

unflavored 100% VG liquid I make myself, about 12mg of nicotine, which

is what I prefer as my "all day vape".

Btw, we even have usb cables all over the house (our phone chargers

and such, plus one or two bought just for plugged-in vaping) and it

seems most things have usb ports now (both the ps3 in the living room

and the ps2 in her room do) so it's so much easier than dealing with a

specific-use battery charging unit.

 

To the left of that is a Joye auto 510, no button to press, you just

inhale. It has a matching black 3 ohm cartomizer on it and I usually

have something sweet in it like bubble gum or cotton candy and it's

often clenched between my teeth while I'm cooking or whatever. The

battery doesn't last a long as the big eGo and the vapor production

isn't as impressive, but I still love it for certain times.

It is usually broken down into its two parts (battery, cartomizer with

mouthpiece) and inside the case.

 

And, standing, is the vaporizer I started on, given to me by a friend.

It is an eGo, not the passthrough variety, so it lasts 4-6 hours if I

use it constantly and then has to charge. I mostly use it for direct

dripping after meals or with coffee for more throat hit, richer

flavor, etc. so it can go days without needing to charge it. I call

it "my alter eGo". It, too, is usually inside the case. In this pic,

it has a metal "drip tip" on it, with a 510 atomizer inside the cone

part.

 

Also inside the case is an extra part or two, a couple little 3ml

bottles of liquid, and a couple clip-on magnets that attach to the

battery so I can just stick it to anything around me that's metal.

When I break down the other two vapos, all I walk out of the house

with is my black usb eGo and the case. Theoretically, I'd be set for

days if need be or be able to let someone try one since it usually has

two complete vaporizers in it.

 

I haven't smoked in what must be almost three months now after 20+

years of smoking. I haven't intentionally quit, but vaping has been

so satisfying I just still haven't gotten around to ordering more

smokes. (For years I have only smoked kreteks (clove cigarettes),

shipped to me from Indonesia as I can't stand the made-for-Americans

variety and they're illegal now anyway, thanks to Obama.)

I do like that I don't cough anymore or wake up with that tight-chest

feeling, I have a much more heightened sense of taste and smell, I can

vape indoors as the vapor dissapates rapidly and doesn't settle into

anything. It is much more convenient, much MUCH healthier, and the

whole thing costs much less than buying cigarettes did.

 

So, nothing but good has come from being introduced to this.

 

Let me throw in a warning.

If you want to try vaping, DO NOT buy the ones at the mall or

wherever. They are the cheapest models available sold at the highest

price possible. This warning also applies to Blu and most of the other popularly-advertised on the web and such brands.

An eGo battery costs $20-$25, $10 for a 5-pack of cartomizers, and $20

of liquid will last a new "vaper" weeks. The hardware will last you

months. The eGo isn't necessarily the best one to start on - I'm just

giving an example.

Bộ phận dùng: Vỏ quả - Exocarpium Citri Grandis. Lá và dịch quả cũng được sử dụng.

 

Nơi sống và thu hái: Loài cây của vùng Ấn Độ, Malaixia, được trồng từ lâu đời ở nhiều nước châu Á. Ở nước ta, Bưởi cũng được trồng nhiều khắp nơi. Có nhiều giống trồng có quả chua, ngọt khác nhau. Thường nói đến nhiều là Bưởi Đoan Hùng (Vĩnh Phú) quả tròn, ngọt, nhiều nước; Bưởi Vinh, quả to có núm, ngọt, ít nước, trồng nhiều ở Hương Sơn (Hà Tĩnh); Bưởi Phúc Trạch quả to, ngọt, nhiều nước, trồng nhiều ở Hương Khê (Hà Tĩnh); Bưởi Thanh Trà (Huế) quả nhỏ nhiều nước, ngọt và thơm; loại Thanh Trà hồng ngon nhất; Bưởi Biên Hoà (Đồng Nai) quả to, ngọt; nhiều nước, trồng ven sông Đồng Nai; Bưởi đào, ruột và múi màu đỏ nhạt, thường rất chua; Bưởi gấc, quả đỏ, chua, trồng ở ngoại thành Nam Định (Nam Hà) dùng để bày mâm ngũ quả ngày Tết. Tinh dầu vỏ bưởi chứa d-limonen, a- pinen, linalol, geraniol, citral; còn có các alcol, pectin, acid citric. Dịch quả chín có nhiều chất bổ dưỡng: nước 89%, glucid 9%, protid 0,6%, lipid 0,1% và các khoáng Ca 20mg%, P 20mg%, K 190mg%, Mg 12mg%, S 7mg% và Na, Cl, Fe, Cu, Mn... Tính vị, tác dụng: Trong cuốn Nam dược thần hiệu, Tuệ Tĩnh đã viết về Bưởi; Vỏ quả Bưởi gọi là Cam phao, vị đắng cay, tính không độc, thông lợi, trừ đờm táo thấp, hoà huyết, giảm đau; trị tràng phong, tiêu phù thũng. Bỏ cùi trắng, lấy lớp vỏ vàng sau dùng. Ngày nay, ta dùng vỏ quả, xem như có vị cay, đắng, tính ấm, có tác dụng trừ phong, hoá đàm, tiêu báng (lách to), tán khí thũng (phù thũng thuộc khí). Ở Trung Quốc, người ta cho là nó làm để tiêu, giúp sự tiêu hoá, làm long đờm, chống ho. Lá có vị đắng, the, mùi thơm, tính ấm, có tác dụng tán hàn, tán khí, thông kinh lạc, giải cảm, trừ đờm, tiêu thực, hoạt huyết, tiêu sưng, tiêu viêm. Cụ Tuệ Tĩnh đã cho biết quả bưởi vị chua, tính lạnh, hay làm cho thư thái, trị được chứng có thai nôn nghén, nhác ăn, đau bụng, hay người bị tích trệ ăn không tiêu. Nay ta dùng dịch quả có tính chất khai vị và bổ, lợi tiêu hoá, khử lọc, dẫn lưu mật và thận, chống xuất huyết, làm mát.

 

Công dụng, chỉ định và phối hợp: Vỏ quả dùng trị đờm kết đọng ở cổ họng và cuống phổi, đau bụng do lách to; còn dùng trị đau dạ dày, đầy bụng, ăn uống không tiêu, ho nhiều, hen, đau thoát vị. Lá dùng chữa sốt, ho, nhức đầu, hắt hơi, kém ăn; còn dùng chữa viêm vú, viêm amygdal. Ở Ấn Độ, người ta dùng chữa bệnh động kinh, múa giật và ho có co giật. Dịch quả dùng trong trường hợp chán ăn, mệt mỏi khó tiêu, ngộ độc, da huyết, tạng khớp, ít nước tiểu, suy mật, giòn mao mạch, chứng sốt và bệnh phổi. Vỏ hạt có pectin dùng làm thuốc cầm máu. Hoa bưởi được dùng để cất tinh dầu thơm, dùng trong công nghiệp sản xuất bánh kẹo.

 

Cách dùng: Vỏ quả và lá được dùng uống trong dưới dạng thuốc sắc, mỗi ngày dùng 10-15g. Dịch quả dùng uống trong, ngày uống 3 lần trước các bữa ăn. Lá dùng ngoài không kể liều lượng. Người ta dùng nướng chín để nắn, xoa bóp hay nấu nước xông và ngâm để chữa sưng chân do hàn thấp, chướng khí, giảm đau do trúng phong tê bại. Lá non dùng chữa sưng trên khớp, bong gân, gãy xương do ngã, chấn thương; còn dùng chữa đau bụng, đầy bụng do lạnh. Hạt bưởi bỏ vỏ ngoài, nướng chín đen rồi nghiền thành bột dùng bôi chốc lở da đầu, ngày 2 lần, trong 2-3 ngày.

 

Đơn thuốc: Cụ Hải Thượng Lãn Ông đã ghi trong Bách gia trân tàng.

 

1. Chữa phù thũng: Vỏ bưởi đào, Mộc thông, Bồ hóng mỗi vị 20-30g, Diêm tiêu 12g, Cỏ bấc 8g, sắc uống mỗi ngày 2 lần vào lúc đói và ăn một khẩu mía trước và sau khi uống thuốc. Kiêng muối và chất mặn.

 

2. Chữa sản giật phù thũng, cùng các trường hợp phù thũng: Vỏ Bưởi khô và ích mẫu bằng nhau tán nhỏ uống mỗi lần 8g với rượu vào lúc đói. Hoặc dùng mỗi vị 20-30g sắc uống.

 

Ở Trung Quốc, người ta cũng sử dụng một số đơn thuốc:

 

1. Chữa ho có nhiều đờm: Vỏ Bưởi 10g, thêm đường kính, pha uống dần dần. 2. Chữa hen: Vỏ Bưởi (lấy ở quả bưởi từ 0,5 đến 1 kg), một miếng Bách hợp, 120g vẩy Hành khô, đường trắng 120 tới 250g, nấu nước uống, chia làm 3 lần uống trong ngày, liên tục trong 9 ngày.

Usos do Chuchuzeiro:

 

- Houve tempos em que o chuchu era, simplesmente, alimento para os animais domésticos; hoje é conhecido e apreciado no país; por sua consistência e sabor suave combina-se com muitos alimentos.

 

Na medicina caseira, cozido sem sal, é indicado principalmente para hipertensos, para problemas renais ou de bexiga.

I didn't believe in the supernatural until after 2009 when I started experiencing things right out of a horror movie. Initially, thinking I was experiencing a psychosis, I went to a couple of psychiatrists and tried all the class II anti-psychotic medications available at the time. I was diagnosed as schizophrenic, but none of the medications helped me do anything but sleep a little better for a while. I was proscribed 600 mg of Seroquel and 12mg of Ambien for a bit.

 

I bragged about the medications to a voice I was hearing at the time that called itself "The Lucifer" - obviously lying about it’s name whatever it was - and I told it something like "this is my hedge you can't do anything about it". Then one night I heard the voice say "now I'm going to show you how I can overcome the medications".

 

Shortly afterwards, I had very severe insomnia which lasted for a period of about three years and got ulcers. Even my psychiatrist once remarked, when I discussed the problem with him and the current amount of medication I was taking, "that's quite a bit of of medication for sleep". He then explained to me the importance of being careful with the dosages of medications which slow your breathing and your heartbeat..

 

When I questioned the voice about the whereabouts of my guardian angel one day - as I thought surely I "know my rights" and must have one... I "was given" the visual image of a man with wings in a closet tied up in ropes!! Later theories of mine were that the demon had handed my angel a large wad of cash, or that my angel, in a fit of despair, simply ditched his halo and went on holiday... ;)

 

In the end, becoming a Christian and drawing closer to the Lord healed me as none of antipsychotic medications I tried worked in terms of eliminating the strange things happening to me - smells with out any source of odor, sensations of being touched by something invisible, a strong overwhelming sensation of fear that would appear and disappear on the order of seconds and dreams and hints about things that would happen in the future.

 

In the course of seeking help, I spoke with Dr. Richard Gallagher who is a very nice person and was teaching at NY medical college at the time. He has an interesting book out called "Demonic Foes" - a really good read!!

 

I am still a great believer in modern medicine, psychiatry and psychology and think anyone thinking they might being having problems with spirits like demons, should first seek out a psychiatrist and try treatment and see if what happens. Ideally a psychiatrist, for a person seeking treatment, would be of their same faith and open to the possibility of spiritual warfare - though I know they are rare.

 

In fact, I remember walking around one day near the end of a nearby trail, a little depressed because I was unable to sleep, often being tormented by the voice during the daytime, and having run into a bit of skepticism about the existence of demons among several of the priests and pastors I had spoken to about my problems. I then prayed silently once again - a heartfelt prayer that time - voicing all my problems and once more asking the Lord for help.

 

About a half hour later, I crossed a street and went into a fast food place to get a drink as it was hot out that day. After paying for the drink and sitting down I noticed a man sitting with someone that worked at the fast food place with a book. I found out later that the man was leading a Bible study there with a young man who worked there.

 

We got to talking and I mentioned my state of affairs and he ended up giving me the number of a friend of his that was a psychiatrist, was also a reverend, and whom I learned later had had a demonic encounter of his own in a cabin near the top of K2.

 

What were the odds exactly?!!! This was one more strange experience that served to increase my faith as a Christian.

 

But the real truth is that inevitably trials and tribulations and nastiness of all sorts will come along when you become a Christian.. There is an explanation in 1 Peter 4:12-14 which talks about suffering for Christ:

 

"Dear friends, do not be surprised at the fiery ordeal that has come on you to test you, as though something strange were happening to you. But rejoice inasmuch as you participate in the sufferings of Christ, so that you may be overjoyed when his glory is revealed. If you are insulted because of the name of Christ, you are blessed, for the Spirit of glory and of God rests on you."

Made as a side dish for our usual tilapia. However, I needed to cut the potatoes smaller and the indirect heat that the grill called for didn't do much to brown them. The browning you see was only when I turned on a bit of direct heat under the pan. The butcher had linguica earlier in the week, but didn't have any when I went to buy it so I used chorizo. Also couldn't find any boiler or pearl onions fresh anywhere, and wasn't going to buy a bag of frozen pearl onions only to use 8.

 

Its a 'maybe try again', tho I thought the potatoes themselves had a really nice flavor.

Linguica is a Portuguese sausage--you can substitute Spanish-style chorizo or kielbasa. Leave the root end intact on the onions so they don't fall apart as they cook.

3 cups water

2 tablespoons Dijon mustard

1 teaspoon sweet paprika

2 teaspoons white vinegar

1/2 teaspoon ground red pepper

1 (14-ounce) can fat-free, lower-sodium chicken broth

2 bay leaves

16 small red and yellow potatoes, halved lengthwise (about 18 ounces)

8 small boiling onions, peeled (root end left intact)

Cooking spray

4 ounces linguica sausage, diced

1 tablespoon chopped fresh flat-leaf parsley

1/2 teaspoon kosher salt

 

Preparation

 

1. Remove grill rack, and set aside. Prepare grill for indirect grilling, heating one side to medium-high and leaving one side with no heat. Place grill rack on grill.

2. Combine 3 cups water, Dijon mustard, and the next 5 ingredients (through bay leaves) in a large saucepan. Bring to a boil, and cook for 2 minutes. Add potatoes and onions; bring to a boil. Reduce heat to low, and simmer for 12 minutes. Remove from heat, and let stand for 10 minutes in cooking liquid; drain. Cut onions in half.

3. Pierce the bottom of a disposable aluminum foil pan several times with the tip of a knife. Place the potatoes and onions in pan, and coat with cooking spray. Place pan on grill rack over unheated side of grill; cover grill, and cook for 25 minutes or until lightly browned.

4. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add sausage, and sauté for 4 minutes or until lightly browned. Combine sausage, potato mixture, parsley, and salt in a large bowl; toss gently.

2 teaspoons olive oil

1 cup chopped onion

2 teaspoons chopped fresh oregano

4 garlic cloves, minced

3 cups chopped yellow squash

3 cups chopped zucchini

1 cup chopped carrot

1 cup fresh corn kernels (about 2 ears)

4 cups chopped tomato, divided

3 (14-ounce) cans fat-free, less-sodium chicken broth, divided

1/2 cup uncooked ditalini pasta (very short tube-shaped macaroni)

1 (15.5-ounce) can Great Northern beans, rinsed and drained

1 (6-ounce) package fresh baby spinach

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 cup (4 ounces) grated Asiago cheese

Coarsely ground black pepper (optional)

 

Heat oil in a Dutch oven over medium-high heat. Add onion to pan; sauté 3 minutes or until softened. Add oregano and garlic; sauté 1 minute. Stir in squash, zucchini, carrot, and corn; sauté 5 minutes or until vegetables are tender. Remove from heat.

Place 3 cups tomato and 1 can broth in a blender; process until smooth. Add tomato mixture to pan; return pan to heat. Stir in remaining 1 cup tomato and remaining 2 cans broth; bring mixture to a boil. Reduce heat, and simmer 20 minutes.

 

Add pasta and beans to pan; cook 10 minutes or until pasta is tender, stirring occasionally. Remove from heat. Stir in spinach, salt, and 1/2 teaspoon pepper. Ladle soup into individual bowls; top with cheese. Garnish with coarsely ground black pepper, if desired.

    

Yield: 8 servings (serving size: 1 1/2 cups soup and 2 tablespoons cheese)

Bottom Layer:

1 cup AP flour

1/2 t salt

1 cup sugar

1/2 cup egg substitute

1/4 cup butter, melted

2 T water

1 t vanilla extract

2 large eggs, beaten

1 can (16 oz) chocolate syrup (1 1/3 cups)

Cooking spray

 

Mint Layer:

2 cups powdered sugar

1/4 cup butter, melted

2 T fat free milk

1/2 t mint extract

2 drops green food coloring

 

Glaze:

3/4 semisweet chocolate chips

3 T butter

 

1. Preheat oven 350*

2. To prepare bottom layer, lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and salt; stir with a whisk. Combine granulated sugar and next 6 ingredients in a medium bowl; stir until smooth. Add flour mixture to chocolate mixture, stirring until blended. Pour batter into a 13x9 inch baking pan coated with cooking spray. Bake @ 350* for 28 minutes or until a toothpick inserted in center comes out almost clean. Cool completely.

3. To prepare mint layer, combine powdered sugar, 1/4 cup melted butter, and next 3 ingredients in a medium bowl; beat with a mixer until smooth. Spread mint mixture over cooled cake.

4. To prepare glaze, combine chocolate chips and 3 T of butter in a medium microwave safe bowl. Micorwave at HIGH 1 minute or until melted, stirring after 30 seconds. Let stand 2 minutes. Spread chocolate mixture evenly over top. Cover and refrigerate until ready to serve. Cut into 20 pieces. Yield 20 servings
