Vegan #Nachos Supreme
It’s been too long since I put together my #vegan nachos supreme. First I layered a big plate of corn chips with Daiya Vegan shredded cheddar dotted with small spoons of refried beans (I use the dehydrated pinto variety packaged by “Taste Adventure” as they are low salt and ready in 5 minutes). I microwave this just till the shreds melt (about 45 seconds). I already had the rest of the fixings ready so the beans & cheese woudn’t cool off too much—salsa, fresh diced tomatoes, chopped sundried tomatoes, sliced garlic-stuffed green and kalamata olives, Tofutti Sour Supreme non dairy sour cream and Frank’s Red Sauce. After the photo was taken I added a layer of finely shredded lettuce and a little more salsa. A spoon and serviette were necessary.
