SOS Elegante

Years ago my mother made a recipe with chicken breasts called chicken elegante. Slices of dried beef were wrapped around chicken breasts and then they were baked in a sauce made with sour cream and condensed soup.

My husband observed that it would be easier to eat if you cut the chicken and beef into bite size pieces. So I started making it that way. He christened it SOS Elegante after the slang expression, sh** on a shingle, for chipped beef on toast.

I prefer it on rice, but it's good this way, too.
