Fried Eggplant

An unfinished dish ~~ Frying the egglant and letting it cool down is only the first step in making the Spicy Eggplant Salad. We have to make the dressing which is a mixture of canola oil, red pepper flakes, tamari sauce, rice wine vinegar, honey, and sesame oil. At service time, garnish with finely chopped green onion.

We can forget about the salad and instead make a quick and easy Chinese dish. Let's saute some minced garlic (with red chili - optional), then add oyster flavored sauce and hoisin sauce - 50/50. Add the fried eggplant in the pan. (Easy on the stir. We don't want to mash our beautiful eggplant.) Let the flavors meld together on low fire for a couple of minutes. Serve hot over rice.
