Comfort Food
Since all of today's other images are rather cold in nature, here is something warm and tasty! I love this meal, inspired, yet again, by Real Simple magazine. Fry your pierogis in a hot, oiled pan. While that is going on, chop up some apples and leeks. Sautee your leeks 'till soft, then add your apples (1 large for 2 people) and cook those for about a minute. Then throw in some coleslaw mix and apple cider vinegar, topping it all off with a pinch of salt and pepper. Sautee 'till it's soft, adding more ACV as necessary.
When everything is done, pile it onto a plate with whatever else you are eating (we had a white bean-spinach-carrot thing), with sour cream or Greek yogurt for dipping your pierogis, and eat. Tasty!
