Chocolate Tarte with Pears

This one is for the party we're invited to tonight. Recipe taken from the wonderful chocolate cook book I got for my birthday. The pears should not have sunk in quite as much, I guess the form I made this in was a little too small.

I can only recommend whole-heartedly to get it if you like chocolate (the original is in English I believe and should be available on Amazon as well.

 

The pastry for the crust is easily prepared: mix 180g flour, 110g (diced) cool butter, 35g golden sugar, 1 egg yellow and about a table spoon of ice water. Put the pastry in the fridge for 20 minutes before rolling it out and putting it into your tarte or cake form.

 

The filling is a bit more complicated.

 

First melt 125g dark chocolate (I took 70% dessert chocolate bought in France, we do not have that kind of chocolate here). But the melted chocolate in the fridge to get it to cool down for a little.

 

Then mix 125g butter - leave it out of the fridge for a while before you make this - and 90g golden sugar. Add four egg yellows and 125g ground almonds and 2-3 drops of bitter almond oil. Mix well. Add the chocolate which should be cool enough by now.

 

Whisk the egg whites until they are stiff and carefully fold into the chocolaty mixture.

 

I pre-baked the pastry for a bit before putting in the filling. Pre heat the oven at 200°C.

 

Now you need to peel to pears, de-seed them and cut them in half. Cut them in thin slices so that they are still held together at the upper end, open the slices like a fan.

 

Put the filling into the form. Put the pears on the filling.

 

Bake for 15 minutes at 200°C. Reduce the temperature to 180°C and bake for another 10-15 min.

 

Serve either warm or cold (even better after a day). Goes well with Crème Fraiche or vanilla ice cream.
