红烧走油肉 (Braised Pork Belly)

Dinner @ '见面汇', a new noodle bar at the back of my apartment.

 

Braised Pork Belly is a common 'old world' Shanghai dish. It had fallen on the waysides with the greater awareness for health and wellness but it is slowly making a silent comeback as the locals started to crave for something traditional after decades of foreign culinary invasion.

 

It is important that the slice of pork is braised within a whisker of disintegration and the majority of the oil and fat from the pork belly had been skimmed off. This piece did not disappoint: The flesh and skin melted away like butter, or in this case, soysauce flavoured butter.
