大盘蛙 (Frog Legs Platter)

A huge platter of pre-fried frog legs, stir-fried with lots of Sichuan spices (dried red chillies, Sichuan peppers, garlic, spring onions and ginger), lotus roots, potatoes and Chinese coriander leaves.
I am more used to the oily moist version from Sichuan, and so a 'dry' version is a little bit of a novelty. The dish has a lovely spicy aroma, mixed in with the earthiness of stir-fried lotus roots and potatoes. The frog legs were quite tender, although not as moist compared to the traditional version.
