小葱八带(章鱼) (Spicy Octopus & Spring Onion Salad)

Lunch @ '老转村川菜馆', the Sichuan cuisine restaurant arm of the Hotel I was staying at.

 

A fiery kick-in-the-face appetiser. Utterly irresistible. The raw spring onions are fresh and alliaceous, exploding pungency in the mouth, but in the right doses. The cooked octopus were tender and savoury, having absorbed the soysauce base marinate like a sponge. The sprinkling of chopped Bird's Eye Chillies added colour as well as the in-the-face kicks to the tastebuds.
