Beef Choila (Nepalese Beef Stew)

A return to "Nepali Kitchen' for part two of Nepalese taste sampling.
Thick beef stew that arrived with a very sweet and curried aroma (slightly dominated by cumin) but tasted of soysauce. I can definitely made out pieces of smoky dried red chillies and mashed tomatoes - I can imagined this being a fusion result of a Chinese stew and an Indian curry.
(From online recipes, I realised fenugreek is used and the usage of fenugreek now explains the impression of soysauce and the aroma of sweetness I detected)
The beef was unfortunately, a tad on the tough and aged side. Would have been more perfect if the meat had been a tad more tender and moist.
