椒盐螳螂虾 (Salt & Pepper Fried Mantis Prawns)

Dinner @ '锦上鱼府' (Peninsula Seafood) in Qingdao.

 

In Qingdao, for some reasons, Mantis Prawns (螳螂虾) are called "Tiger Prawns" (虎虾). Elsewhere, as far as I know, Mantis Prawns are never called as such, as Tiger Prawns denotes a different variety.

 

Eating Mantis Prawns can be a pain some times as the shell has plenty of jagged points and one has to be very careful not to get cuts on the lips and the tongue. But the flesh is always decadently sweet and umami and that is the main draw why folks enjoy Mantis Prawns.

 

They are almost universally fried. Here, they were then given a quick stir-fry with fried garlic and served with the universal pairing of salt and pepper.

 

Delicious they were!
