香酥鸡 (Crispy Fried Chicken)

Lunch @ Qingdao's '春和楼', a culinary institution in the city.

 

THE dish to order at this restaurant - de-boned chicken given a crispy fried treatment.

 

The skin were very crispy and highly aromatic. They were a delight. Despite the fried treatment, the meat had retained its moisture and held its shape. I could not detect any major spice notes but I guess some times the best taste is the natural taste of the main ingredient itself.
