卤面 (Saucy Noodles)
Dinner @ Laozhuanchun Shandong Restaurant (老转村山东菜馆).
So, there is a Shandong style saucy noodles (or noodles with gravy). It's actually a simple dish, with greater emphasis on the texture of the noodles, where it is more prized to have the noodles made by hand.
Ingredients in this case for the sauce or gravy, are eggs, chopped up long beans and white clams.
The sauce or gravy is usually prepared by stir-frying the ingredients before adding water, soysauce, sugar and salt to make a sort of stock. It is then thickened with cornstarch before beaten up eggs are added as a finishing touch. The noodles are cooked separately, drained and then scoops of the sauce or gravy added before serving.
This was the last dish to be served. By then, my mate and myself were almost stuffed. I find the noodles rather plain, as if the chef had forgotten to add salt. The long beans I thought were not a good choice of ingredient as the soup came across as rather beany as well....so perhaps it was good that it was served last.
