酸菜豆瓣汤 (Preserved Mustard Green with Fava Beans Soup)

Dinner @ '蜀江村' for Zigong [自贡] 盐帮菜, a sub-vein in the Chuan vein [川] of Chinese cuisines.

 

Preserved Mustard Greens is very popular in Sichuan. Here, it is chopped up and cooked in stock with fava beans (used in the making of the famous Sichuan Spicy Bean Paste) for a tangy and beany tasting soup.

 

I like preserved mustard greens myself but am not too fond of the phenolic taste of the fava beans.
