小炒肉 (Stir-Fried Pork With Fresh Green Chillies)
Dinner @ '成都印象' in Chengdu.
Not really a Sichuan dish in origin. It's from the province next door - Hunan. My local colleagues felt they have tasted better but I thought the dish was done well. The pork slices were tender and well flavoured. The pieces of fresh green chillies interspaced with the much fiery pieces of red chillies were fresh, crunchy and packed full of heat.
I find myself going back to this dish sub-consciously throughout the dinner!
