水煮鱼 (Oil Poached Fish Slices)

THE taste of Sichuan. Fish slices, quickly poached first in boiling water, were then placed in a big serving bowl with celery slices, cucumber slices and ming bean sprouts and then drowned in boiling hot rapeseed oil with lots of dried chillies and Sichuan Peppers.
The hot air actually helps to retain the freshness and the tenderness of the fish slices and it provides lovers of this dish, much fun, trying to dig out all these tender morsels.
