川北凉粉 (Sichuan Spicy Mung Bean Noodles)

Dinner @ '成都印象' in Chengdu.

 

This is a simple and common appetiser. Mung bean noodles are doused generously with "Sichuan Red Oil" (which is the oil obtained by frying Chilli powder in rapeseed oil), sesame oil, salt, vinegar, garlic paste, Sichuan fermented bean paste and then topped with lots of crushed peanuts.

 

It is a very addictive dish. The alluring aroma and explosion of basic tastes is what make this simple irresistible!
