Stir-Fried Hsinchu Rice Vermicelli (新竹米粉)
Lunch inside Terminal 2 of Taoyuan International Airport.
The main dish, ordered for my mum since she like rice vermicelli. Hsinchu rice vermicelli is famous for its angelic fineness and lends itself well for all sorts of cooking as it absorbs all sorts of sauces and gravies intensely well.
Here, the rice vermicelli was lightly stir-fried, probably in oil with some soysauce and some garlic and then served with braised minced pork and fresh greens. Looked pretty but unfortunately, fell short of flavours again. The chef at this cafe seems to be frightened of adding salt or soysauce and everything seemed to taste a shade of bland.....and I am not a salt fiend to begin with.
