Sesame paste is widely used in China to flavour cold noodles in the summer months. In the Matsu islands, folks seemingly have taken a stronger liking to the black sesame paste instead.
The flavour was very aromatic and intensely rich and like squid ink pasta, this will stain your lips and teeth blackish as well, which may not be the best choice of food for a date!
I find the sauce too rich to finish a bowl on its own.
