川烫金针菇 (Enoki Mushrooms With Braised Pork Gravy)

Dinner @ Chamate (一茶一坐), a chain of restaurants in Shanghai serving Taiwanese cuisines.

 

Probably considered as an appetiser or a side dish, Enoki mushrooms are poached quickly in boiling water and then served with braised pork gravy (the most common gravy one can find in Taiwan). Poached Enoki mushrooms are popular in Shanghai as well. I like the soft but yet stringy texture, easy to chew but yet had plenty of crunch. The mushroom itself has a very mild and soft earthiness but lends itself really well to all sorts of sauces and gravies.
