太湖白虾 (Steamed Lake Prawns)

Lunch @ Tongli (同里), a water village, 1.5 hours outside Shanghai.

 

The prawns are much smaller in size, with a rather bulbous head compared to the body. More shell than flesh as well but once steamed (with chopped spring onions and ginger), the flesh took on a sweet umami-ness that is utterly delicious.

 

One of the must-eat(s) in this part of the delta.
