Black Woodear Fungus in Chicken Stock (鸡汁木耳)
Day out to the Dongtan Wetlands Nature Park (崇明岛东滩湿地公园) on Chongming Island.
Black woodear fungus is popular as an ingredient in Shanghai. I was very surprised at how flavourful the fungus were. They seemed to have soaked up the chicken stock like sponges and the taste of the stock exploded in the mouth with peppery blasts. I do suspect that the stock may not be made from real chicken but from the modern rendition - stock cubes and gels but the peppery touch is definitely the work of the chef.
