Yunnan Bamboo Baked Rice (云南竹筒饭)

I have already encountered this earlier in Taiwan in a community made up of migrants from Yunnan. The same dish is also common among the Indochinese countries and in Yunnan, it is the specialty of the Dai tribe (傣族), who are closely related to the Indochinese folks.

 

Glutinous rice with meat is baked inside a bamboo cylinder over charcoal fire to yield a product that is fragrant, nutty and sumptious.
