Fresh Spring Bamboo Shoots and Ham Soup (腌笃鲜)

Dinner @ "佰家仟味" with a colleague.

Supposedly a restaurant serving "Wei" Cuisines (徽菜), but the restaurant actually serves a rather expanded menu which also includes dishes from the Yangtze River Delta.

 

This dish was recently featured in a CCTV food documentary called "A Bite Of China" (舌尖上的中国) and gained plenty of fame.

 

It's essentially a soup brewed from fresh spring bamboo shoots, fresh pork belly and (Chinese cured) ham. "腌" refers to the salty-savouriness of the dish; "笃" refers to braising and of course, the last "鲜" always refer to freshness.

 

As the name already implies, the soup is very fresh, very succulent, very umami/kokumi and very succinic. The cured ham added a fine savouriness to the sweet freshness of the crunchy bamboo shoots, with the fattiness of the pork belly providing a creamy mouthfeel. If not for the fact that the soup is a tad fatty, I could drink it for days.
