Lijiang Naxi Pancake (丽江纳西粑粑)

The local Lijiang Naxi tribe specialty, traditionally made with local wheat flour and waters from the mountains. The pancake is then rubbed with oil and then rolled into thin layers. The thin layers are piled on each other, with pieces of ham, sugar, chopped spring onion etc scattered between layers. The layers are then pressed down tightly and then pan-fried until golden brown.

 

The pancake is flaky, like eating a phyllo, but yet still pretty dense and oily at the same time. I don't think I can finish the plate all by myself. It's just a tad too heavy on the stomach.
