Braised Platter (卤味拼盘)

Dinner @ '大蓉和' (www.daronghe.cn/), a modern Sichuanese restaurant chain with colleagues.

 

A bid departure from the fires and brims of Sichuan cuisines. It turns out braising with soysauce is also popular in Sichuan, just like in the south of China. Here, a platter of braised lotus roots, pork ribs, pork belly and tofu was offered.

 

I am not sure if it is a Sichuan thing, or it is the style of the restaurant - the various components were not soft enough. There is still a hint of crunch or toughness in the bite. In true Southern Chinese style, everything would have been braised to the brink of disintegration.
