Sichuan Spicy Minced Pork Noodles / Sichuan Tan Tan Noodles (四川担担面)

Lunch @ '永记汤元烫馆' in Chengdu.

 

I am always a big fan of 'Tan Tan Noodles' but outside Sichuan, they comes in all sorts of different forms, even spawning soup versions!

 

Tan Tan Noodles should actually be a dry (or at best, semi-wet) blended minced pork noodles flavoured with fried chilli oil and paste. In Sichuan, I am so glad to have the real McCoy.

Fried chilli paste - what's not to like?

Everything meets together in a heavenly bowl of noodles - I like.
