Eels are very popular in Shanghainese cuisines. They are totally different from the soft tender Unagi from Japan. In Shanghai, the locals love their eels firm and springy for bite. Here, the eels were wok fried in oil with soysauce and light spices and served with a rich dusting of chopped spring onions.
