Roasted Brinjal Salad (凉烤茄子)

Dinner @ '上海人家' - a restaurant chain offering Shanghainese cuisines.

 

Brinjal (or Eggplant or Aubergine) is a very popular fruit/vegetable in Shanghai. There are many ways to prepare it and consume it. In this instance, the brinjal was offered as a cold appetiser. The brinjal was first roasted, cooled and then the flesh shredded and marinated with soysauce, chillies and sesame oil. Served, topped with some XO Sauce for a touch of decadence.

 

I always like brinjal and so this made an excellent appetiser!
