Cucumber Salad Beijing Style (蓑衣黄瓜)

Dinner @ '海碗居' [www.haiwanjv.com/default.aspx], a very traditional Beijing 'Zhajiangmian' (炸酱面) restaurant.

This is really a simple dish - appetiser - cucumber slices flavoured with sesame oil, vinegar, sugar, salt, roasted sesame seeds, Sichuan pepper and chilli pepper. Served cold.

 

The pleasure of this dish is in the knifeskills - how to prepare cucumber slices evenly and then arranged them into art pieces for culinary enjoyment.
