Water Shield {Brasenia schreberi} is a common water plant found in the lakes and rivers in the 2 provinces of Zhejiang and Jiangsu. Rich in vitamins and minerals, the slightly slimy but firm texture of the vegetable is highly prized and is commonly used into soups with meat or seafood as well as into salads.
