Saltwater Chicken (鹽水雞/盐水鸡)

From information gathered off the Internet, the chicken is first marinated with a combo of salt, Chinese wine, pepper and some Chinese medicinal herbs, and thereafter, poached in salt water. The poached chicken is then left to air dry to rinse off excess water before serving.
