Iron-Hard Preserved Eggs (淡水鐵蛋/淡水铁蛋)
From the shop that made this item famous - '阿婆鐵蛋'.
These extremely hard-chewy (hence the nice name, "Iron Eggs") but highly flavourful eggs are the results of long hours of braising eggs in soysauce and spices and then air-drying them repeatedly across several days.
Think of each egg like a chewing gum (sort of) but something that you would enjoy swallowing.
