Stewed Pig Knuckles (滷豬腳/卤猪脚)

Side dish to accompany the noodles my mate and myself had ordered. Taiwan is heavily influenced by Southern Chinese style cooking where a lot of things get long stewed and braised in soysauce and spices.

 

Pig knuckles and peanuts are 2 very popular ingredients that get thrown into pots and be stewed/braised till within a hair of dis-integrating totally. I love it when peanuts melt like butter and the fats and collagen of the pig knuckles slather off into a gooey mess into the mouth.

 

Unfortunately, both items in the dish were still a little firm and not perfectly softened.
