Tainan Minced Pork Noodles (台南擔仔麵/台南担仔面)

Lunch @ '度小月' (www.iddi.com.tw/) in Taipei.

'度小月' is a famous restaurant chain in Taiwan specialising in Tainan Minced Pork Noodles. The English name of the chain is a strange "Slack Season". The origin of the enigmatic name can be traced (as narrated on their website) to the alternative form of livelihood that fisherman Hong has to resort to during the months where fishing is not possible.

I am a sucker for minced pork noodles of any form. And despite missing out on the south and the far south of Taiwan this trip, I have decided I am still going to get my taste of this noodle in Taipei.

The novelty of this chain of restaurants is that the kitchen is in the front of the shop (sort of, as only the section preparing the noodles is in the front), so you can place your order and watch your noodles prepared right in front of your eyes (provided you have a table near the chef preparing your bowl of noodle).
