Fermented Bean Paste Noodles (炸醬麵/炸酱面)

Dinner @ '四鄉五島馬祖麵店' (www.matsunoodles.com/front/bin/home.phtml), an eatery specialising in noodles from the islands of Matsu.

 

Fermented Bean Paste Noodle is a common feature in northern China. It is all in the fermented bean paste to deliver the sweet, salty, fermented beany taste that ultimately flavoured the noodles.

 

Taipei was warm and I wasn't really keen to have a whole bowl of hot soupy noodles to sweat over.
