Matsu Fish Noodles (馬祖魚麵/马祖鱼面)
Dinner @ '四鄉五島馬祖麵店' (www.matsunoodles.com/front/bin/home.phtml), an eatery specialising in noodles from the islands of Matsu.
It's basically clear soup noodles served with fish balls, fresh vegetable, black nori seaweed strips and shaved bonito.
The bonito and seaweed combo imparts an intriguing enhanced seafoody character to the noodles. The mustiness of the seaweed and the smokiness of the bonito accentuated the fishy characters of the soup and fish ball but not in a bad way.
I am not sure if the noodles are really served as such on Matsu Island. Perhaps I should go there one good day to find out.
