Pork With Preserved Vegetable Noodle (雪菜肉絲麵/雪菜肉丝面)

The bland colour had me worried for a while. This was the carbo we had ordered for the evening. However, once I had a taste of the soup, all worries dissipated. The taste was surprisingly very defined but yet absolutely delicate. There is always a tendency for this dish to go wrong - either the preserved vegetable is too salty or musty, or the pork used is too tough and animalic. None happened here.

 

The taste of the preserved vegetable lightly danced on the palette before giving way to the sweetness of the pork.

 

I was quite impressed.
