Sour & Spicy Soup (酸辣湯/酸辣汤)

We got off to a great start with the steamed miniature pork buns. I wanted something spicy and opted to have a bowl of Sour & Spicy Soup to kick the appetite up a notch.
The soup probably has its origin in Hunan & Sichuan provinces. The soup is usually thickened a tad before serving with cornstarch and flavoured with Chinese black vinegar and of course, chillies and spices. Ingredients could include mushrooms, bamboo shoots, chicken, pork, tofu and egg.
It has a 'growling' quality to it - robust, sturdy and infinitely irresistable.
