Ding Tai Fung Steamed Miniature Pork Buns (鼎泰豐小籠包/鼎泰丰小笼包)
Taipei is home to the world famous Ding Tai Fung [鼎泰豐] (www.dintaifung.com.tw/ch/index.asp), once voted by the New York Times as one of the world's 10 Best Restaurants in 1993.
Since then, the restaurant has expanded quickly to gain market share in Asia, opening branches in Hong Kong, China, Malaysia and Singapore, among other locations.
Unfortunately, I always find the standards of the offerings in the Singapore branches wanting. Even though, friends had shared that the standards had also slipped somewhat in the Taiwanese shops, my mate and I decided that we would still pay a visit and determine it for ourselves.
Of course, we weren't there in 1993 to taste the buns but these from 2012 were good enough. Very moist, very soft. The ski taut enough to contain the pork meat filling and the lovely sweet juices within and yet frail enough to break upon on bite to offer the wonders within. We ordered both the original as well as the version with crab roe, and both were perfect.
Way above the standards I have to tolerate back home.
