Black Meat Noodles (黑肉麵/黑肉面)

Lunch in Zhanghua [彰化].

 

What exactly is 'Black Meat'? Actually, it has more (again) to do with the nickname of the founder of the shop than with any ingredient used.

 

The current specialty of the shop is actually Braised Pork Chop Rice, although it really started out as a shop selling Braised Pork Noodles. Generations of owners had refined their braising to a point that they actually developed a new product that superceded the popularity of the original shop specialty.

 

We just had braised pork hock rice for breakfast and so decided to opt for the original noodle dish instead. We ordered the smallest serving and it arrived with just 1 pork ball and some smidgens of braised pork. However, we did find small white clams among the noodles and I believe it is the presence of these clams that made the soup, brothy, umami, sweet and came with just the faintest hint of the sea.

 

Again, it was the soup that defined the dish.
