Chiayi Turkey Rice (嘉義火雞肉飯/嘉义火鸡肉饭)

This is from the very famous '噴水雞肉飯' in the city of Chiayi.

We had a 2 hours layover in the city before we need to catch the train up to Zhanghua. What else to do to kill off 2 hours but to go hunt for this very famous Chiayi dish.

The most unique point of this dish, is the usage of turkey, beyond the most traditional form we tend to associate it with. Here, the turkey is poached like a chicken, then chopped into small pieces/slices and then served on white rice, slathered with a sauce made from soysauce and turkey fat, with a sliced of preserved radish.

Truly, I have NEVER tasted turkey so good. The pinkish morsels of meat was tender, moist, bouncy and succulent. My mate was not convinced it was turkey. The servings were very small and we opted to have both versions served - rice with minced meat and rice with sliced meat. Both versions were very good.

Up to this day, I am still very impressed with the culinary skills that was used to prepare the turkey meat. Now, if only the turkey coming out of the oven for Thanksgiving is this moist, tender, springy and succulent!
